Victim of Serious Food Poisoning?

Food Poisoning Attorneys in San Jose

Representing Victims of Food Poisoning

Food poisoning, which is also known as foodborne illness or foodborne disease, is any type of illness that results from consuming contaminated food or beverages. This can not only lead to illness, but to other health issues that require visiting a physician. In fact, according to the Centers for Disease Control and Prevention (CDC), it is estimated that about 76 million Americans get sick from consuming contaminated food every year, leading to 300,000 hospitalizations, of which 5,000 individuals lose their lives.

If you suffered from food poisoning, the San Jose legal team at Caputo & Van Der Walde LLP, will fight to hold all negligent parties accountable for their actions to ensure you receive the compensation you deserve.

Types of Food Poisoning

There are various ways in which food poisoning can occur, though it can usually be traced to three major causes:

1. Bacteria: The most common culprit of food poisoning is bacteria, particularly e. coli, listeria, and salmonella. Among these dangerous bacteria, salmonella is the biggest source of food poisoning cases in the country, causing an estimated 1,000,000 cases of food poisoning, 20,000 of which require hospitalization. Campylobacter and c. botulinum are other lesser-known bacteria that are potentially lethal and can be present in food.

2. Parasites: Food poisoning can also be caused by parasites, though it is not nearly as common as bacteria. Toxoplasma is the parasite most frequently seen in this type of poisoning and is typically found in cat litter boxes. Parasites are capable of living in the digestive tract for years.

3. Viruses: Lastly, poisoning can be caused by a virus, the most common of which is the norovirus (or the Norwalk virus). In rare cases, this type of poisoning can be fatal. Less common viruses include the sapovirus, rotavirus, and astrovirus.

Other types of contamination include natural and artificial toxins. Many plants are evolved to produce compounds that are designed to poison animals, which prevent them from being eaten by potential predators. Unfortunately, this means natural toxins can be found in nearly every food group.

Food Poisoning Symptoms

If you have food poisoning, it will not go unnoticed, though its symptoms and duration can often vary depending on the source of it. It can take anywhere from an hour to 28 days before symptoms appear.

Common cases of food poisoning typically include the following symptoms:

  • Abdominal cramps
  • Diarrhea
  • Vomiting
  • Loss of appetite
  • Fever
  • Nausea
  • Headaches
  • Weakness

More severe, potentially life-threatening cases of food poisoning are associated with the following symptoms:

  • Diarrhea that persists for more than 3 days
  • Difficulty seeing or speaking
  • Symptoms of severe hydration, which can include dry mouth, passing little to no urine, and difficulty keeping fluids down
  • Blood in urine
